About Grades of Syrup
Maple syrup is graded by color, clarity, and
flavor. The lightest grade is called Light
Amber Grade A 'Fancy'. It has the most
delicate maple flavor, and is generally made
from the first run of the season. The sap at
the beginning of the season has a high
content of sugar, so it doesn't need to be
boiled as long to reach the proper
concentration to qualify as pure NH maple
syrup (67% sugar). Our second grade is
Medium Amber Grade A. It has a rich maple
flavor, and is slightly darker in color than
the fancy. The next grade is Dark Amber
Grade A. It has a darker, stronger, more
robust flavor than the previous two. Our
final grade is called Cooking Grade B, which
has the darkest color and the strongest
maple flavor--the name speaks for itself.
The best baked beans and cakes are made from
Cooking Grade syrup. |
